This bunka-inspired chef's knife is forged by hand in our Copenhagen workshop. It is built for cooks who need a single knife that can move between heavy prep and fine work without losing composure. The thick spine and differential heat treatment give it the backbone to handle tough root vegetables and large proteins, while the fine cutting edge stays nimble enough for herbs and delicate work.

The handle is carved from reclaimed mahogany and curly cherry, two woods chosen as much for character as for feel. Each handle is shaped to suit the knife it belongs to.

This knife is not intended for use on bones.

Carbon steel requires a little care. Dry the blade after use and apply a light coat of oil occasionally. It will patina with use, which is normal and helps to prevent surface rust.
