Black Walnut Chef's Knife

This chef's knife is forged by hand in our Copenhagen workshop from 1084 high carbon steel. It is a general-purpose knife designed for the kind of work that fills most cooking sessions: vegetables, proteins, mushrooms, and everything in between.

The blade receives differential heat treatment, leaving the spine softer and more forgiving while the cutting edge is hardened for durability and sharpness.

A distal taper toward the tip keeps the point fine and responsive for detail work, while the convex geometry at the heel gives it the weight and bite needed for heavier prep. The blade transitions naturally between the two, making it easy to move between tasks without switching knives.

The handle is carved from reclaimed black walnut and fitted with a mahogany end cap and a bolster of sugar maple and coconut shell. Each piece of wood is chosen and shaped individually. No two handles are the same.

Carbon steel requires a little care. Dry the blade after use and apply a light coat of oil occasionally. It will patina with use, which is normal and will help to prevent surface rust.
